If you’re looking for a fool proof dessert for this holiday, you want to make my friend, Sunny’s rum cake.
Every time my friend, Sunny bakes her rum cake, it literally disappears. I shared an update on Sunny last Friday but she has been doing exceptionally well after her surgery. We are so thankful that she doesn’t have to have go through chemotherapy! She still has another big surgery in December so please keep her in your prayers. We recently celebrated her great news and she baked two of these rum cakes for the party. I ate a couple of slices and I finally asked her for the recipe because it’s the most amazing frosting free cake I’ve ever had. She said her aunt gave her the recipe and it does have a rum glaze on top but she never makes that part and honestly, it’s quite perfect without it. This is one of the most moist cakes but I think the best part is the outer crispy layer. It’s perfect as a dessert but equally satisfying with coffee for breakfast. The alcohol adds a subtle flavor that enhances the chocolate flavor to the max. I don’t like the taste of alcohol alone but it is divine in this cake!

Rum Cake
Ingredients:
- yellow cake box mix
- small chocolate pudding box 3.9 oz
- 4 eggs
- 3/4 cup water
- 1 cup vegetable oil
- 1/4 cup vodka
- 1/4 cup Kahlúa
- 1/4 cup sugar
Directions:
- Preheat oven at 375 degrees.
- Place all ingredients in large bowl and mix by hand.
- Spray the bundt cake generously with oil spray.
- Pour the mixture into the pan and bake for about 45 minutes. The outside will have a crispy outer edge but it will be perfectly moist in the center.
If you don’t have a bundt pan, I recommend using a large rectangular dish or pan. If you use a bundt pan, it will rise a bit. See the fat bottom?!
You can sprinkle powdered sugar on top but again, I think it’s perfect just the way it is.
It makes a beautiful centerpiece too. Be sure to pin the bottom image to save it to your archives. If you make this for the holidays, everyone will ask you for the recipe.
