Sweet Soy Sauce Crockpot Chicken

You will love this mouth-watering sweet soy sauce crockpot chicken. 

Wowza, it’s cold! Here’s a really simple meal to throw in your crock pot, dutch oven or instant pot for that chilly, winter day. This delicious sweet soy sauce crockpot chicken hits the spot and is perfectly paired with some white rice or quinoa.

Here’s how to make your own:

Sweet Soy Sauce Crockpot Chicken:

Ingredients:
  • 10-12 Chicken drumsticks
  • 2 chopped sweet potatoes
  • 2 cups of baby carrots
  • 2 cups of chopped potatoes
  • 1 large chopped onion

For the sauce: mix together the following

  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 3 tbsp brown sugar
  • 1/2 tsp ground ginger or 1/2 tbsp of minced fresh ginger
  • 1/2 cup chopped green onion
  • 1 tbsp minced garlic
  • 1 tsp red ground pepper (optional)

Directions: 

Mix up your sweet soy sauce and set aside while you chop your veggies. You can’t really go wrong with this recipe so feel free to mix and add veggies. Since the vegetables get pretty soft while they cook, I recommend chopping them into large chunks. My kids love this dish so much and it’s a great weeknight meal.

Place the drumsticks into the pot and pour the sauce all over the top. I always take the skin off the drumsticks but that’s your preference! If you’re using a crock pot, I recommend cooking for about 4 hours. Depending on how you like your vegetables, you can cook it either shorter or longer. I also like to use chicken thighs. If you want to go the healthier route, you can cook chicken breasts but that meat tends to be less moist so make sure to not overcook it!

 

Serve alongside some rice. It’s excellent with kimchee and is the perfect comfort food for a chilly day.

Ingredients

Notes
  1. You can't really go wrong with this recipe so feel free to mix and add veggies. Depending on how you like your vegetables, you can cook it either shorter or longer. Serve alongside some rice. It's excellent with kimchee and is the perfect comfort food for a chilly day. If using a dutch oven or regular pot, cook for about an hour under medium/low heat.
