These flourless chocolate banana muffins are gonna knock your socks off!
This last week, I tried testing this muffin recipe and I am here to tell you these are amazing!! I honestly can not believe that they do not have any type of flour. They remind me of my 5 ingredient peanut butter cookies because those don’t have any flour either. I ate 3 in one batch and then had to make another batch when Emmy came home from school. Here’s how to make your own own flourless chocolate muffins.
FLOURLESS CHOCOLATE BANANA MUFFINS (MAKES 12)
- 1 cup peanut butter or any other nut butter
- 3 ripe bananas
- 2 eggs
- 1 tsp vanilla
- 1/4-1/3 cup sweetener like honey or maple syrup. I like agave syrup.
- 1/4 cup cocoa powder
- 1 tsp baking soda
- 1/4-1/3 cup chocolate chips
Preheat oven to 350 degrees.
Mash the bananas in the bowl really well. Mix in the peanut butter, eggs, vanilla and sweetener together with the bananas. Mix in the cocoa powder and baking soda. Fold in the chocolate chips.
Oh yeah, grab the cutest helper you can find like I did here. While baking, we discussed important topics of the day like crushes and such. 😉
Spray your muffin tin generously and use a spoon to fill them with the mixture. Emmy added a couple more chocolate chips on top. We kept this recipe dairy-free with our favorite chocolate chips.
Bake for about 15 minutes. Let them cool and enjoy! I bet you can’t eat just one!
Oh my goodness, can you just smell them? I shared some with my mom and friends to get their feedback and they loved them.
They will naturally deflate a bit but that’s normal.
