Try this tried and true banana bread with coconut oil recipe!
I know there are a ton of banana bread recipes out there but this banana bread with coconut oil is my very favorite. It’s moist, not too sweet, and has a nice hint of coconut flavor. It’s funny because when it comes to actual coconut flakes, I’m not a fan. BUT, I love coconut oil over popcorn, coconut flavored curries, and coconut cake (not the flakes)! I also love that it’s a healthier version without using butter or regular oil. I made these as a little pre-Valentine’s Day treat and we gobbled them all up with some yummy whole milk.
You want to make sure you use very ripe bananas. When you have ripe bananas, peel and break them in half and store them in a container in the freezer. Just thaw when you’re ready to use them.
Ingredients:
- 3-4 ripe bananas
- 1/3 cup melted coconut oil or 1/3 cup melted butter
- 1 egg
- 1/4 -1/2 cup sugar
- pinch of salt
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1 1/2 cup all purpose flour
- 3/4 cup chocolate chips
Preheat oven to 350 degrees. In a large bowl, mash the bananas and egg together. Add in the vanilla, sugar, salt, and baking soda and mix together. Gently fold in the flour until well combined.
Add the coconut oil and chocolate chips at this time and use the spatula to combine the mixture. When the ingredients soak in the oil, it’s ready to be poured. Lightly grease your pan. Divide the batter into the muffin tin. This recipe will make around 12-15 depending on tin size. Bake for about 25 minutes. If you’re baking in a loaf pan, time will increase to around 40 minutes. Just keep checking until a toothpick comes out clean from the bread.
YUMMMMM. They are the best straight out of the oven.
I dare you to wait till they’ve cooled off. They make the house smell so good!
