What a week! Is it really Friday? It’s been a crazy week with my dad having surgery and being hospitalized (long story but he’s good) and Jimmy working a ton. I’m so glad it’s Friday! Today, I’m thanking the Lord for his goodness in the midst of crazy circumstances. How are you? Hope you had a great week. We eat a good amount of quinoa in our home. I usually mix it with brown rice when eating Korean food. You know I love making chocolate quinoa cake. Quinoa is known to give our bodies healthy fats as well as providing protein, fiber, and a bunch of other nutrients. Last weekend when we went over to the Obrist’s home for potluck, I made this salad dish. I scrounged around the fridge and found some cooked quinoa and some other vegetables and threw them all together.
I chopped up some cucumbers and apples and mixed in some baby spinach leaves. Place them all in a big bowl. I also found a persimmon and an avocado and chopped that up and threw them into the bowl. I should’ve named this, “whatever’s left in the fridge salad.”
I toasted some pecans in the toaster and they provided a nice nutty flavor and crunch.
I added feta but I think next time, I’ll do without it. Just add your favorite vinaigrette right before serving, mix it up, and that’s it! I made a homemade honey vinaigrette but don’t know the exact recipe. In a bottle, I just added vinegar, honey, salt, grapeseed oil, ground pepper and shook it all up.I It’s healthy, delicious, and different than the typical salad. Do you eat quinoa?
