Oh boy do I have the perfect Panzanella salad recipe for you today!
It’s officially the 3rd day of summer and we have been busy swimming and spending time with relatives that we haven’t seen in a year an half. This perfect Panzanella salad is my ideal salad for the summer as it has been on major repeat.
Do you love bread, garlic, lemon, and a bunch of other fresh ingredients? If so, this perfect Panzanella salad is gonna rock your world. What is a Panzanella salad? Panzanella or panmolle is a Tuscan chopped salad of soaked stale bread, tomatoes and onions and a popular salad for the summer months. It makes an amazing salad paired with your summer grilled meats or delicious on its own. You can modify the ingredients but here’s how I make mine.
Perfect Panzanella Salad
Vinaigrette:
- 2 finely minced garlic cloves
- 1 tsp dijon mustard
- salt
- freshly ground pepper
- 8 tbsp olive oil (use 3 tbsp for the bread cubes and 6 tbsp for the dressing)
- 2 tbsp red wine vinegar
- 1 freshly squeezed lemon
- 1 tbsp agave syrup
Salad Ingredients:
- 1 1/2 head of Romaine lettuce chopped
- small container cherry tomatoes halved
- 1/4 thinly sliced or diced red onion
- 1/2 cup freshly grated parmesan
- 1 large sliced cucumber
- 1/4 cup chopped basil
- 3-4 cups cubed bread
Directions:
Preheat oven to 425 degrees. In a large bowl, add all of the salad ingredients except the parmesan and bread cubes. In a sheet pan, spread out the cubed bread and generously drizzle olive oil all over the top. Add salt and mix to make sure the bread is evenly covered with oil. Place in oven for about 10 minutes or until golden brown. Take out and let cool.
In a separate bowl, whisk all the vinaigrette ingredients together. Taste to make sure it’s to your liking. Pour over the salad and toss. Right before you serve, add the parmesan and bread cubes and toss once more.
It’s such a gorgeous salad and the best part is when the bread soaks up the juices of the vinaigrette dressing. It’s really the perfect summer salad.
The kids love it too! One tip for the bread cubes! I like to use the ends of the bread or any leftover hot dog/hamburger buns since we don’t typically have other white bread in the home.
It’s light, refreshing, and full of citrus garlicky flavor. I am so obsessed with this salad and know you will be too.
