Let this easy ravioli spinach soup warm you up this winter.
One day I was rummaging through my fridge wondering what to cook for dinner and this dinner idea was born! You just need a few simple ingredients and you have a delicious warm and hearty soup perfect for a winter day. Here’s how to make your own.
Ravioli and Spinach Soup
Ingredients:
- 1 lb ground turkey
- 32 ounce chicken stock
- 3 cups water
- 16 oz ravioli
- 1 medium diced onion
- 4 cups fresh spinach
- salt and pepper
- oil
Directions:
Under medium hot, add 2 tablespoons of olive or grapeseed oil. Sauté your diced onion and ground turkey. Add tsp of salt. You can also add a tsp of garlic powder. The best part of this recipe is that you can modify all of the ingredients. You can substitute the turkey for ground beef. You can add tortellini instead of ravioli. Add diced carrots instead of onions or do both! That’s the great thing about soup. You can change the ingredients to the ones you and your family loves.
Once the meat and onion is cooked, add the chicken stock and water. Cover and boil for at least 10 minutes. Add the ravioli and cook according to the instructions. Usually it’s about 8 minutes. Pour in the fresh spinach and mix with a wooden spoon.
You only need to cook this for about 2 minutes as spinach wilts quickly. Season with extra salt and pepper to taste. Serve immediately with our fresh homemade bread or crackers!
