Today’s post is super short but I wanted to share one of my favorite breakfasts. I made this for Jimmy on Father’s Day and it’s one of his favorites. It’s a hit or miss with me when it comes to making traditional omelettes. Sometimes, they break apart because I love having way too many ingredients. Other times, they get soggy. This is my favorite way because it comes out amazing every single time and you can have as many toppings as you want. Basically, you fry up the egg mixture with some milk, salt, and pepper. Throw some cheese in there and fold it up. Add as many veggies on top like avocados, fresh tomatoes, sauteed onions, mushrooms, and spinach. I love putting roasted veggies if I have some leftover from dinner the night before. I also add some ham or sausage and more cheese.
Easy! This is a great weekend breakfast since it takes a little more time to prepare it but it’s delicious and totally satisfying.
