Yesterday, we celebrated my sweet mom’s birthday. It was so beautiful seeing my parents with all four of their grandchildren.
My parents love to try different foods. Since they mostly eat Korean, they love eating non-Korean food when they come over to my place. I made chicken pot pie, taco pie, and avocado egg salad. I used frozen pie crusts to save on time. For the chicken pot pie, I baked it on the crust for about 30 minutes. I took it out of the oven and then topped it with refrigerated crescent roll as the top crust and baked it for another 10-12 minutes. I also made a simple rice krispies cake. My mom made this all the time for us growing up.
Speaking of desserts, here is an oatmeal recipe that’s sure to please a crowd. I love eating oatmeal in the mornings and these cookies have oatmeal so I can eat them for breakfast right? Ha! These cookies have M&Ms but you can always substitute for chocolate chips or raisins. The cookies are hearty with a softer middle and crunchy crust.
Ingredients:
- 1 stick softened unsalted butter
- 1/2 cup sugar
- 1 tsp salt
- 1 tsp baking powder
- 2 eggs
- 1 cup flour
- 3 cups old fashioned oats
- 1 1/4 cup of M&Ms
Preheat the oven to 350 degrees.
When the kids see any of my baking supplies out, they come running to help. EVERY SINGLE TIME. I’m still learning to let go of all the messes that come with my little helpers and I have to remember that it’s helping to instill in them a love for being creative in the kitchen.
Even Ems always wants to help now.
In your mixer, cream the softened butter and sugar. Beat in the egg. Sift the flour, salt and baking powder into the bowl and mix well. Add in the oatmeal and mix together again. Pour in the M&Ms and mix with a spatula.
Take spoonfuls of the cookie dough and place them on a greased cookie sheet. You can also line them with parchment paper because there’s less clean up at the end. Using the back of the spoon, push it down and flatten it a bit. Bake for about 12-15 minutes. Take out and let it cool for a couple of minutes before transferring them to a wire rack.
I finally made a little chalkboard measuring chart from a thrifted, old board and placed it in my baking corner. It has been so useful!
Let you kids drool over the cookies while they’re cooling down. Emmy kept pleading, “please mommy!”
