Add this delicious and simple garlic lemon ricotta pasta recipe to your weekly menu
Hey friends! I’m baaaaacck!! We had a great summer as our house was full of extended family members visiting and staying with us for most of the summer. Now that the kids are back in school, I am blogging again. So much has happened and if you follow me over on Instagram, you are aware of all the crazy sister shenanigans that have taken place in our home. There is truly never a dull moment with her! If you’re looking for another way to make noodles, I highly recommend my sister’s garlic lemon ricotta pasta recipe. She made it for us one evening and we were all hooked.
This recipe is a nice alternative to fettuccine because it’s a lighter version without any heavy cream. Here’s how to make your own.
Garlic Lemon Ricotta Pasta
Ingredients:
- 1 box of fettuccine noodles
- 1.5-2 cups pasta water
- parmesan cheese
- chopped fresh parsley
- 15 oz ricotta cheese
- 3-5 cloves of minced garlic
- 2 squeezed lemons and some of the zest
- crushed red pepper flakes
- salt and ground black pepper
Directions:
Boil the pasta according to the directions. While you wait for the pasta, wash and zest some of the lemons into a bowl. Slice and squeeze out all the juice into the zest bowl and remove the seeds.
Save the pasta water as you will add this to thicken the sauce. Grate at least 1.5 cups of parmesan cheese into a bowl. I also like to cut some shavings to add to the top of the pasta. In a large bowl combine the lemon juice, parsley, ricotta, pasta water, some salt, and grated parmesan. It will become a milky sauce and the pasta water will melt the parmesan and ricotta cheese.
Generously pour some olive oil in a large pan to brown the minced garlic. Once that’s done, add the pasta into the pan along with the cheesy sauce. Serve immediately with some crushed red pepper flakes, shaved parmesan, and some black pepper. It’s really that easy! Serve with a salad or as is.
The whole family loved this dish and the ricotta really breaks up the lemon flavor. It’s simply delicious!
