Double Chocolate Chip Banana Bread

What’s better than banana bread? Double chocolate chip banana bread of course.

There is something so nostalgic about baking and eating homemade goodies. This is a favorite recipe in the Min household. I adapted it from some other recipes and it has become our go to bread for breakfast and mid day snack. During the holidays, I bake a few times a week so we always have some baked goodies on hand. This double chocolate banana bread is moist and delicious! Your mouth will thank me. #notyourpants #sorrynotsorry

Gather your ingredients shown above including bananas, sugar and chocolate chips.

Double Chocolate Chip Banana Bread

  • 4 ripe bananas
  • 1/3 cup melted butter
  • 1 egg
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cup all purpose flour (i like to use 1 cup flour and 1/2 cup whole wheat white flour)
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup unsweetened cocoa powder
  • 1/2 to 1 cup chocolate chips (i prefer dark chocolate chips)

Preheat oven to 350 degrees. In a bowl, mash the bananas. Add the melted butter, egg, sugar and vanilla. Mix well and add in the dry ingredients. You don’t need to overmix this. Just make sure the cocoa powder is evenly distributed. Add as many chocolate chips your heart desires and bake at 350 degrees until the bread bounces back. Make sure to grease your pan so it’s easier to take out. I usually bake this in a bundt pan and it takes about 30 minutes. Just keep an eye on it. It’s awesome when it’s warm! Enjoy it alone or with ice cream! It can be great for breakfast, snack or dessert. It has bananas so it’s considered healthy in my book!

Ingredients
  1. 4 ripe bananas

Instructions
  1. Preheat oven to 350 degrees. Grease your pans generously with cooking spray.
  2. In a bowl, mash the bananas, add the melted butter, egg, sugar and vanilla. Mix well.
  3. Add in the dry ingredients and mix till evenly distributed.
  4. Add in the chocolate chips.
  5. Bake for about 30-40 minutes until the bread bounces back to touch.

Even though Jules isn’t that far, it’s still so di Even though Jules isn’t that far, it’s still so different without her in the house. I miss her big giant hugs, random crazy dance moves, impromptu jams on the piano, base guitar, harmonica, and ukulele. It’s a mix of excitement, happiness and sadness and I’m letting myself feel it all. I catch myself getting weepy throughout the day but I feel a deep sense of gratitude for this new season and what she’ll get to experience. 
Aside from the rug, the girls styled their space and it turned out so cute. I love that she’s rooming with her friend from 1st grade. How can my child be in college?!😭😢
