Today, I’m linking this yummy recipe with the Thoughts of Home linking party and at the Inspiration Gallery.
You guys, I wanted to name this recipe, “Freaking Delicious Can’t Believe How Easy It Is Creamy Crockpot Chicken Tacos.” Unfortunately, that didn’t fit into the title. These tacos were tender, creamy, and full of flavor. The best part is that you throw everything into the crockpot and it does most of the work for you.
Every time I shop at Costco, I always pick up a rotisserie chicken. The funny thing is I get sick and tired of eating it but sometimes, it’s just what we need on a night I don’t feel like cooking or need something quick and easy. One day I looked in the refrigerator and saw that dreaded rotisserie chicken staring at me still waiting to be eaten. I hate wasting food so I decided to experiment and try adding a few ingredients to see how it would turn out. Sometimes, when I do this, it’s an utter failure but this time it actually turned into a new family favorite. It’s already in our rotation for dinners and the kids love it.
Crockpot Chicken Tacos
Ingredients:
- 1 rotisserie chicken (debone the chicken and place large or shredded pieces into the crockpot)
- 3 cups frozen corn
- 3 cups salsa
- 1 can drained and rinsed black beans
- 1 tbsp taco seasoning (I make big batch and store in container using this recipe but you can use from a packet too)
- 1 package of cream cheese 8 oz (add this at the last hour of cooking)
See how easy those ingredients are? If you decide to use chicken breasts, I would add more seasoning including salt and pepper. Rotisserie chicken already has a lot of flavor so I only use the taco seasoning to flavor this dish.
Throw everything into the crockpot and let it cook for about 5 hours. At the 4th hour, I add the cream cheese and mix it around and place the lid back on to finish cooking. The cream cheese makes it creamy and adds a delicious component to this dish.
Oh yum…. Just add your favorite toppings like avocados and shredded cheese.
It’s unbelievably easy and delicious.
I love eating it as a salad and crushing the taco shell on top. My kids eat it this way too.
This is a perfect weeknight meal! We had it last night for Taco Tuesday and invited another family to eat with us. You’ll want to try this soon because it’s just that good.

This sounds wonderful! I’m putting this on the menu next week. My husband doesn’t eat much chicken but he’s going to be out of town so my son will be a happy camper to have this. We love tacos of all kinds here in Texas. When I buy rotisserie chickens I go ahead and take the meat off while it’s still hot…it’s so much easier. Sometimes we freeze it and use later. Don’t you think rotisserie chickens are the best invention? 🙂

Hi Carol, I cook it on high but either one should be fine if you use rotisserie chicken!
