With the holidays right around the corner, here’s a delicious and healthy chicken veggie salad you’ll love
When my brother John and his partner Stephen visited our family a couple of months ago, he whipped up the most delicious meals for our family. One of these recipes was his chicken veggie salad. My kids devoured it and I knew it had to become a regular staple in our home. I’ve made this chicken veggie salad no less than 8 times since he’s left because it’s so full of crunch goodness. Here’s how to make your own chicken veggie salad.
Chicken Veggie Salad
Ingredients:
- 3-4 cups shredded rotisserie chicken or 3 cans (10 oz) of chicken breast
- 1 cup sliced cherry tomatoes
- 1/4 chopped red onion
- 1 cup chopped cucumbers
- 1/2 cup chopped celery
- 1/2 cup toasted walnuts or pecans
- 3/4- 1 cup mayonnaise
- 1 tbsp dijon mustard
- 1 freshly squeezed lemon
- salt and pepper to taste
Directions: Put all your ingredients into a bowl and mix. Make sure to get all the ingredients mixed into the mayo dijon mustard. The lemon juice is key and adds so much flavor to this recipe.
I’ve tried this with both rotisserie chicken and canned chicken and love both versions. I normally omit salt because the chicken usually has enough sodium.
It’s so vibrant and full of vitamins and minerals. Your body will thank you.
The great thing about this delicious chicken veggie salad is that you can modify it to however you wish. I even modified my brother’s recipe. He loves to add roasted broccoli which is so so good too. I love to add it on top of some mixed greens. Feel free to add your favorite dressing. I like it as is and will add a fried egg and/or roasted veggies too.
With the holidays just around the corner, this will help you to make some good food choices you can be happy about! I bet it would be great with leftover turkey too from Thanksgiving. My kids love it when I pack some for lunch inside a pita. Make it into wrap, sandwich, or eat it alone.
