Berry Sorbet is the perfect treat for that hot summer day.
I know many people have started to get their fall decor out but I’m still in summer mode because I’m sweating like bullets in this GA heat. It’s still hitting 90s here this week. Since we’re still drinking and eating smoothies and popsicles, I thought I’d change it a bit while we are still in need of refreshing treats. I decided to make berry sorbet! It’s super healthy because it’s just frozen fruit and coconut water.
It’s basically like a smoothie but with less liquid.
For the sorbet, I used coconut water, frozen organic strawberries, bananas, and blueberries. You can any frozen fruit, juice, or just plain water. I used a blender but it took a little time. I kept adding coconut water until I got the desired creamy consistency. I also added water in between since the coconut water has some sugar. A vitamix would make this quicker. You could even use a food processor and have some chunks of fruit in there.
Just pour the sorbet into a baking pan and freeze. You can also serve immediately.
I let the kids eat the first batch straight from the blender one day after school and they were in heaven. I was chuckling because it’s basically like a thicker smoothie but they were so happy eating fruit “ice cream.” I decided to make another batch and froze it in a baking dish. The next day, let it sit for at least 5 minutes before trying to scoop.
YUMMY! It’s so refreshing! The possibilities are endless.
