Sunny’s Rum Cake

November 6, 2017

If you’re looking for a fool proof dessert for this holiday, you want to make my friend, Sunny’s rum cake.

Every time my friend, Sunny bakes her rum cake, it literally disappears. I shared an update on Sunny last Friday but she has been doing exceptionally well after her surgery. We are so thankful that she doesn’t have to have go through chemotherapy! She still has another big surgery in December so please keep her in your prayers. We recently celebrated her great news and she baked two of these rum cakes for the party. I ate a couple of slices and I finally asked her for the recipe because it’s the most amazing frosting free cake I’ve ever had. She said her aunt gave her the recipe and it does have a rum glaze on top but she never makes that part and honestly, it’s quite perfect without it. If you bake Sunny’s rum cake, let me know how it turns out!

Ain’t that the truth! #mondays

This is one of the most moist cakes but I think the best part is the outer crispy layer. It’s perfect as a dessert but equally satisfying with coffee for breakfast. The alcohol adds a subtle flavor that enhances the chocolate flavor to the max. I don’t like the taste of alcohol alone but it is divine in this cake!

Marble Cake Stand

Here’s a video I put together with Ems. Whenever I bake, she comes running and has to be my little helper.

Here’s how to bake your own. A big thanks to Sunny and her aunt for this amazing homemade recipe!

Rum Cake

Ingredients:

  • yellow cake box mix
  • small chocolate pudding box 3.9 oz
  • 4 eggs
  • 3/4 cup water
  • 1 cup vegetable oil
  • 1/4 cup vodka
  • 1/4 cup Kahlúa
  • 1/4 cup sugar

Directions:

  1. Preheat oven at 375 degrees.
  2. Place all ingredients in large bowl and mix by hand.
  3. Spray the bundt cake generously with oil spray.
  4. Pour the mixture into the pan and bake for about 45 minutes. The outside will have a crispy outer edge but it will be perfectly moist in the center.
Farmhouse Apron

If you don’t have a bundt pan, I recommend using a large rectangular dish or pan. If you use a bundt pan, it will rise a bit. See the fat bottom?!

You can sprinkle powdered sugar on top but again, I think it’s perfect just the way it is.

It makes a beautiful centerpiece too. Be sure to pin the bottom image to save it to your archives. If you make this for the holidays, everyone will ask you for the recipe.

I hope you’ll make this cake for the holidays. Better yet, just make it now! I made it last week and it was literally all gone that same day. Once you taste it, you’ll see why.

Have a great Monday, friends!

Oh this sounds incredible! I would’ve guessed it would have rum in it, but vodka and Kahlua sound even better 😛

I miss her big giant hugs, random crazy dance moves, impromptu jams on the piano, base guitar, harmonica, and ukulele. It’s a mix of excitement, happiness and sadness and I’m letting myself feel it all. I catch myself getting weepy throughout the day but I feel a deep sense of gratitude for this new season and what she’ll get to experience.
Aside from the rug, the girls styled their space and it turned out so cute. I love that she’s rooming with her friend from 1st grade. How can my child be in college?!😭😢
