Southern Style Creamed Corn

November 29, 2016

This southern style creamed corn recipe is the perfect blend of sweet, salty and creamy goodness.

Hi Friends! How was your Thanksgiving? I have to say ours was one of the best we’ve ever had. My SIL hosted and we split the dishes. Jimmy made the most delicious, flavorful turkey after brining it overnight and we stuffed our bellies with tons of sides and desserts including this delicious southern style creamed corn. We both invited a bunch of people who were away from extended family to join us and so we had almost 40 people! My SIL and MIL created tablescapes and place settings for each person by borrowing tables. I loved seeing the faces of so many different people and it really made me so thankful that we were able to celebrate together by feasting and fellowshipping. We gained new friends and felt blessed to open our hands and hearts to others. It reminded me of this verse.

“Therefore welcome one another as Christ has welcomed you, for the glory of God.” Romans 15:7

I made a bunch of side dishes and one of these was creamed corn. YOU GUYS! This is NOT your standard canned cream corn. Not even close. Get that out of your mind because this side is so darn delicious it will make your guests asking how they can make this immediately. The best part is it’s soooo easy and you know how I feel about easy and delicious recipes. The second best part is it’s healthy. Okay, I lied about the second part but hey, it’s the holidays! Just wear stretchy pants and run a few more miles like I did. 😀

Want the recipe? Of course you do!

Southern Styled Creamed Corn (serves 6-8 adapted from here)

Ingredients:

  • 2 lb bag frozen corn
  • 1.5 cups heavy whipping cream
  • 1/2 tsp black ground pepper
  • 3 tbsp sugar
  • 3 tbsp butter
  • 1.5 tsp salt
  • 1.5 cups of milk (I’ve used whole and reduced fat so both work)
  • 3 tbsp flour

Directions:

In a pot under medium high heat, combine the corn, heavy cream, salt, pepper and butter. In a separate bowl, whisk together the flour and milk and stir into the pot. Cook all together for at least 10 minutes until the corn mixture thickens. Remove from heat and serve!

See how easy it is! Try making this for Christmas or for a gathering. I promise it will be a hit! My brother David literally ate 5 servings for Thanksgiving dinner and that was only one of sixteen sides. #wearstretchypants #worthit

I miss her big giant hugs, random crazy dance moves, impromptu jams on the piano, base guitar, harmonica, and ukulele. It’s a mix of excitement, happiness and sadness and I’m letting myself feel it all. I catch myself getting weepy throughout the day but I feel a deep sense of gratitude for this new season and what she’ll get to experience.
Aside from the rug, the girls styled their space and it turned out so cute. I love that she’s rooming with her friend from 1st grade. How can my child be in college?!😭😢
