Hey guys! I’m posting a really quick recipe today because it’s so good not to share.
Are you a fan of cauliflower? Yeah, me neither. WELL, that’s what I thought until I had roasted cauliflower. Now, I could eat the entire head by myself in one sitting. #imnotjoking This veggie gets a bad rap but it’s because the taste and consistency is totally different when it’s raw. When raw, it’s bitter, hard, and just plain terrible. BUT… roasted? It’s soft, caramelized, and oh sooooo delectable. I’ve made this side dish for years and it’s great with a steak, over a salad, or completely alone.
It’s so easy! Preheat the oven to 350 degrees. All you do is chop up the cauliflower and place on a baking sheet.
Generously drizzle olive oil all over the cauliflower and sprinkle salt and ground pepper on top. You can also add garlic powder or fresh mince garlic. Stick it in the oven and take it out after about 15-20 minutes. Flip over and sprinkle some parmesan cheese if you like. Place back in the oven for another 20 minutes or until it is browned and caramelized. You will love the crispy parts.

Roasted veggies are so delicious. Our favorites are cauliflower, broccoli, potatoes, carrots, and squash. Try it and I guarantee you will be a cauliflower convert!
