Hey everyone, hope you had a great weekend and weren’t too affected by daylight savings. We barely woke up on time for the kids to get on the school bus.
This past week, two of our kids were fighting off hand foot mouth disease. One actually caught what looked more like mouth butt disease. Yeah, don’t ask. Thankfully, we had lots of time to rest and take it easy over the weekend so they are finally virus free.
Today, I’m sharing a healthy meal involving quinoa. Quinoa is a powerhouse food containing a good amount of protein, fiber, and minerals. I love substituting rice for quinoa for many meals. You know my love for quinoa is deep because one of my favorite cakes is the chocolate quinoa cake I posted a while back.
While reading “Bread and Wine,” by Shauna Niequist, I came across a simple quinoa bowl recipe. Here’s my take.
Quinoa Bowl
- Aidell’s Sausage (I love mushroom and swiss as well as pineapple bacon)
- sliced onion
- fried egg
- quinoa (I usually make 2 cups so we can have leftovers)
- dash of garlic powder
Follow the directions from your quinoa bag and cook as instructed. Don’t overcook it or you’ll have dry rather than fluffy quinoa.
Stir fry your onion and a few links of sausage all sliced. The best part about this dish is that you don’t need any spices or seasonings because the sausage has enough on it’s own. I like to add a little garlic powder but that’s about it. Fry up an egg the way you like it. I prefer it over easy so the yolk oozes out.
Place your quinoa bowl in a dish or bowl. Add the stir fried onions and sausage and fried egg on top. Easy!!
There are so many variations you could add or substitute. I love mushrooms, broccoli, and roasted veggies. Eat it with Sriracha sauce, hot sauce, ketchup, or whatever condiment your heart desires.
This is a great dish for people who eat paleo, gluten free, or just want a healthier meal.
On another night, I made my friend, Sunny’s Hawaiian Shrimp without the shells and added the leftover sausage and onions into the pan. It was so good! Jimmy and I had this with sautéed broccoli. Instead of quinoa, the kids had theirs over pasta.
