Pumpkin Chocolate Chip Energy Balls

These Pumpkin Chocolate Chip Energy Balls are full of protein combined with the delicious flavors of Autumn.

Thank the Lord the cool temperatures have finally arrived here in Hotlanta. Boy, does it feel good. Cooler temperatures mean pumpkin everythang here in the Min home. I went to Trader Joe’s last week and stocked up on all the things pumpkin and I ain’t mad about it. If you’re looking for a healthy breakfast or snack for this season, I’ve got the perfect recipe for you today. I came up with this pumpkin chocolate chip energy balls when trying to find a tasty mid day snack. These totally hit the spot and I love that they are delicious but also filled with a ton of nutritional value like antioxidants, essential fatty acids, fiber and protein. Don’t you already feel healthy reading that?

But with all things healthy, I need them to taste good and ya’ll, these taste pretty darn delectable. My kids love them and my neighbors and family members really enjoyed them so they passed the test!

Plus, they are just the cutest little treats. 

Here’s how to make your own. If you don’t like any of the ingredients below, just modify it to tailor it to your preference. 

Pumpkin Chocolate Chip Energy Balls (makes 12-13 balls)

  • 1 cup rolled oats
  • 1/3 cup ground flax
  • 1/4 cup chia seeds
  • 1/4 cup pumpkin seeds
  • 1/3 cup mini chocolate chips
  • 1/2 cup peanut or almond butter
  • 1/4 cup honey
  • 2 tsp pumpkin spice seasoning

Look at all that goodness in the bowl!

Instructions:

  1. Take all the ingredients and combine them together until well mixed.
  2. Use a cookie scooper or spoon and take a scoop of the mixture.
  3. Roll them into a ball with your hands one by one.
  4. Place on top of parchment paper for at least 15 minutes so they can harden a bit. You have to squish them so that they remain in a ball shape.
  5. Store in a well sealed container for up to a few days. Enjoy!

That’s it!! So easy right?

We eat these for breakfast and they’re perfect for a mid day snack or pre/post work-out treat.

Ingredients
