This mayo free egg salad recipe is so delicious and best of all, you won’t miss the mayonnaise.
All you need for this delicious mayo free egg salad is just 4 ingredients! This is one of my favorite snacks and meals to eat when I’m on the run. It’s great over salad, in a wrap, with crackers or completely alone. This is pretty similar to the egg avocado salad I posted a while back but with a a little kick.
Here’s a quick video I put together to show you just how easy it is.
Easy enough, right? You can tweak the ratio of the avocado and eggs. If you love bacon, add more bacon! I like using bread and butter pickles because I like the salty bite combined with the sweet and tangy pickles. This is so much healthier than the conventional recipe that uses mayonnaise and you get added nutrients from the avocados. If you love avocados, you will dig this egg salad.
Mayo Free Egg Salad
Ingredients:
- 2 avocados
- 6 hard boiled eggs
- 3 strips cooked turkey bacon
- 1/2 cup chopped bread and butter pickles
- 1/2 tsp salt
- 1/2 tsp black pepper
Directions:
Place all ingredients into a bowl and mash until desired consistency. That’s it! See how easy I told you it was?
