Bacon Chocolate Chip Cookies

Yup you read that right. These cookies are probably some of the best I’ve ever made. It’s sweet, salty and the bacon just takes it over the edge. Do you like bacon? Do you like cookies? Well, then this is a total no brainer. It’s pure decadence in your mouth. The next time you host a gathering, makes these for your guests and they will thank you endlessly! Here’s how to make your own batch. 

Ingredients:

  • 2 sticks softened salted butter 
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 1/2 cups all purpose flour
  • 1 tsp baking soda
  • 2 tsp hot water
  • 2 1/2 cups chocolate chips
  • 1 1/2 cups – 2 cups cooked chopped bacon pieces

Directions:

IMG_4267 Preheat oven to 350 degrees. Cream together the butters and both sugars. Beat in both eggs and the vanilla until well mixed. Mix the baking soda into the hot water and then stir into the sugar mixture. Mix in the flour and add chopped bacon and chocolate chips. I made extra bacon for breakfast that morning so that I could use them for these cookies.

Emmy is always the first one to assist. Her love for baking matches her love for eating so you know that love is real big. I mean check out that serious expression. It’s cookie time. #gameface

Check out that batter! Drop spoonfuls onto your baking sheets. I like to line mine with parchment paper.

 Bake for about 12-15 minutes. I prefer mine brown and crispy on the outside. 

IMG_4281 This recipe made 24 cookies. I made them a bit big so if you bake smaller cookies, you can make up to around 35.

The cookie monster only ate 2 because ya know… self control is one of the fruits of the spirit. 

IMG_4313 I put some leftover cookies in the fridge and they were soooo good cold. Bake them this weekend and pass some along to friends because sharing is caring.

Even though Jules isn’t that far, it’s still so di Even though Jules isn’t that far, it’s still so different without her in the house. I miss her big giant hugs, random crazy dance moves, impromptu jams on the piano, base guitar, harmonica, and ukulele. It’s a mix of excitement, happiness and sadness and I’m letting myself feel it all. I catch myself getting weepy throughout the day but I feel a deep sense of gratitude for this new season and what she’ll get to experience. 
Aside from the rug, the girls styled their space and it turned out so cute. I love that she’s rooming with her friend from 1st grade. How can my child be in college?!😭😢
