This 3 ingredient pumpkin bread recipe is a staple in our home.
Once October hits, we are full force into pumpkin everything in our home. We absolutely love making pumpkin bread and you will see my girls making this particular recipe at least once a week because it gets devoured so quickly. Try this 3 ingredient pumpkin bread and I bet it won’t last long.
Obviously, you can follow the directions on the box and add the oil and water and eggs like it normally calls for. However, we prefer the recipe this way as it tastes better in our opinion. Plus, the added benefit is that you add a lot more nutrition and take out the unneeded oil.
Here’s how to make your own.
3 Ingredient Pumpkin Bread
Ingredients:
- Pumpkin Bread or Spice Mix (I either use Trader Joe’s or Krusteaz)
- 1 egg
- 1 can pumpkin (NOT pumpkin pie filling)
- optional: chocolate chips, pecans, walnuts, etc
Directions:
Preheat the oven to 350 degrees. Mix all the ingredients together in a bowl. Spray a baking dish with oil and pour the batter into the pan. Bake for at least 20 minutes depending on the type of dish or pan you are using. Check on it to make sure it’s fully cooked with a toothpick. Insert it and if it comes out clean, it’s done!
We love this recipe because the bread is super moist from the canned pumpkin. I prefer the Krusteaz mix but some of my kids like the Trader Joe’s better. Either way, it’s delicious and they all enjoy it. The kids love eating it for breakfast and it can really help to make our school mornings go a lot smoother. Plus, I feel good that they are eating something satisfying with added potassium, vitamin A and iron.
